Fresh + Light Sesame Cucumber Salad
Refreshing, crunchy and light! This salad perfect for warm days sitting outside in the park, by the pool or at a BBQ. The best part is it can be made ahead and served the following day.
Fresh + Light Sesame Cucumber Salad
INGREDIENTS
- 1 large cucumber
- 1/4 small red onion
- 1 tbsp apple cider or rice wine vinegar
- 1 tbsp sesame oil
- 1 teaspoon sea salt
- 1/2 tbsp honey
- 1 tbsp sesame seeds
- Optional: 3 tbsp chopped, fresh cilantro
- Optional: 2 tbsp red chilli flakes
DIRECTIONS
- Thinly slice the cucumber and red onion (use a mandolin if you have one) and add to a bowl.
- Make the dressing by warming the honey so it is liquid. Add honey, vinegar, sesame oil, sea salt and sesame seeds to a small bowl and combine.
- Add dressing to cucumbers and combine well.
- Top with optional cilantro and red chilli flakes.
- Enjoy right away or refrigerate for up to 2 days.
